Lentils can be found in the bean aisle at the grocery store.
Instructions:
Fill a wide-mouth mason jar about ¼ to ⅓ full with the lentils.

Cover the lentils with water, and give an extra inch or two of water.
It's better to have too much water than not enough!

Place the jar of lentils on a kitchen counter to soak for about 8 hours.

After 8 hours, drain the water out with your hand over the top of the jar to keep the lentils inside.
Place the jar in a place with indirect sunlight. A windowsill is perfect.
Every 12 hours or so, fill the jar with water, rinse the lentils, and drain the water back out.
After just a day or two, roots start to grow.

After 5 to 7 days, the sprouts will have green tips reaching for the sun, and the jar will be full of delicious sprouts!

Store Sprouts:
Sprouts will last about a week in the fridge.
I like to put them in a zip-top bag with a folded paper towel inside.
The paper towel helps remove any excess moisture and helps the mung beans last longer.

How to Eat Sprouts:
It's way too hard to decide the best way to eat sprouts because there are so many ways.
- Salads: Add a handful of fresh sprouts to your salad bowl for a crunchy texture and a nutrient boost.
- Sandwiches and Wraps: Use sprouts as a topping for sandwiches and wraps for added crunch and flavor.
- Smoothies: Blend sprouts (microgreens) into your smoothies for an extra dose of protein and vitamins.
- Stir-Fries: Lightly cook sprouts in stir-fries for a nutritious and delicious addition to your meal.
- Soups: Top your soups with fresh sprouts just before serving for added freshness and nutrients.
- On Toast: Add sprouts to avocado toast or any other toast toppings for a healthy breakfast or snack.
- With Eggs: Sprinkle sprouts on scrambled eggs, omelets, or frittatas for a nutritious start to your day.
I love to throw sprouts on salads, or in yummy veggie wraps.

They are also a perfect topping to Vietnamese Pho Soup.
I will toss them on my scrambled eggs for breakfast.

Sometimes I find my kids snacking on them right out of the fridge. It doesn't get better than that!

Our Baking Essential List:
- For baking casseroles, we use Glass Baking Dishes. I especially like the dishes with lids so leftovers can be transferred straight to the fridge.
- Silicone Kitchenware is my favorite because they don't scratch my cookware and is easy to clean!
- A Glass Cutting Board is a must to prepare all of those ingredients. We even keep ours on our counter at all times.
- This Knife Set will also become your favorite! They cut beautifully, and with the hollow design of the knife, food doesn't stick to the blade.
